Salad Surprise

I LOVE surprises.

Big ones.

Little ones.

Surprises near.

Surprises far.

I LOVE salads, too.

Put the two together, and

WAHOOZIE!!

I've hit the jackpot!

I put the littles down for rest time (we've transitioned from "nap" time to "rest" time...well, at least for Spice).

LUNCHtime for Mama!

Out to the garden I went for my luncheon harvest.

I planned on getting arugula...

lettuce...

then, I noticed one of my chard plants needed pruning -- so I grabbed some of that.

Then I checked out my herb garden...

found some cilantro that needed pruning as well.

I de-stemmed the arugula, threw the head lettuce, chard and cilantro in my rinsing water.

Got out the handy-dandy SALAD SPINNER (a MUST have for any and all salad aficionados).

Gave it a whirl, dumped the excess water, gave it another whirl, and tossed it in a bowl.

Hmmmmm.....what next.....

I sliced up a cucumber and threw in a few tommy-toes.

Went out to the garage-fridge to grab my feta and discovered my left-over fajita meat and grilled onions from lunch yesterday.

SCORE!

Gave it a quick re-heat, and piled it on top.

And THEN, I found a little citrus vinaigrette I had saved from a previous dinner.

Let me tell, you folks -- it was DEEEEEEEELISH!!

It came together better than I imagined.


And the photos don't even do it justice.


It was quite SURPRISING

Can't wait to repeat this one.

BUT, it just won't be the same...

Things like this just don't happen every day in the salad world.

Just Another Day of the Coffee House Life...


Life is a whirlwind.

Literally.

My beautiful littles have me going in three different directions.

Makes my head SPIN!!

They're keeping me young and aging me (increase in number of gray hairs) all in one.

I LOVE it.

Like the other day...

The girls decorated my hand with cutie stickers. 6 cuties disappeared in about 7 minutes flat.

It was an active day at our house. We watched transformation....

We ventured out, running from here to there --

things felt a little time crunched, a little stressed...

I ran around the car to get Bean out, and she was snacking on these.

Look closely (you may not have to).

Yeah...those aren't cheese puffs!

Don't worry.

She didn't skip a beat!

Aware

Each year, I become more and more aware.

Aware of how quickly life passes by...

of how I don't want to waste time with trivial worries...

of how I don't want to forget a single memory with my girls...

of how God knew that the Hubs was the only one for me...

of how family and friends are so special.

When tragedy strikes, it is a sharp reminder of how EVERYTHING can change in an instant.

The guilt sets in.

What? You felt sorry for yourself today because the laundry was never-ending.

What? You felt sorry for yourself today because you had to clean up doggie messes three times.

What? You felt sorry for yourself today because you didn't speak to anyone over the age of 5.

Seriously?!?

I'm embarrassed.

I know and am very AWARE of the many blessings God has bestowed upon me and my family.

I just allow the world to take over sometimes.

Please join me in praying for those that are suffering as the result of a tragedy in their life.

I pray that God will carry them through,

and I know He will....
